Petite Loin - $11/lb

Very lean cut with great flavor. Cook medium in a pan to rare, and rest. Deglaze pan with wine or stock, add minced shallot until brown. Add cream and cracked peppercorns and reduce. Slice the loin thin and gather on plate, sauce.
